Quick 'n Delish Bran Muffins

I seriously never thought any of us would see the day that I (Renché) would be posting a recipe for you guys!🤣 There's a few very good reasons why I got Lara as our Fit Foodie to be in charge of recipes - reason number 1 is because I am useless in the kitchen!


Yet here we are, I'm sharing my first ever recipe with you guys! And you don't have to be scared to try it - it's my mom's recipe (not something I assembled). Also it has been taste tested by Lara & received the green light!🚦 They are truly delicious and super filling.



This recipe makes 24 jumbo muffins!


Ingredients:

  • 6 cups Wheat Bran

  • 3/4 cup Brown Sugar

  • 3 cups Milk (I used low fat cow's milk - if you use almond milk it will bring the calories down)

  • 6 3/4 cups Cake Wheat Flour

  • 3 tsp Baking Powder

  • 3 tsp Bicarbonate of Soda

  • 1 1/2 tsp Salt

  • 3 Eggs (slightly beaten)

  • 3/4 cup Honey / Syrup (I used honey)

  • 1 1/2 cup Oil (I use either canola oil or extra virgin olive oil)


Instructions:

  1. Preheat your oven to 180 degrees.

  2. Mix the wheat bran, sugar & milk.

  3. Mix the dry ingredients & add to Step 2.

  4. Mix eggs, oil & syrup into the mixture.

  5. Bake for 30 minutes at 180 degrees, turning the muffin pans halfway through.

  6. Enjoy!

**Store them in the fridge (once they have cooled off) or freeze them.

Serving Suggestion:

These muffins are delicious hot / cold.

You can have it just as it is or pop it in the microwave for 1 min & add some butter, cheese or any of your favourite toppings!
