Easy Spinach & Feta Quiche

If you are a little like me you are SOLD on any recipe that is quick, easy and use fresh ingredients! After a long day at work (or after an even longerrrrr week at work!) I want to put something on the table that is delicious but also healthy.


This spinach and feta quiche is easy to prepare and full of delicious flavour! You will love the combination of sweet sautéed onions, fresh spinach, salty feta and a nice dash of mozzarella cheese to add some creaminess.


Why we need to eat more Spinach!
  1. It is a great source of Iron.

  2. Spinach contains an antioxidant known as alpha-lipoic acid, which has been shown to lower glucose levels, increase insulin sensitivity, and prevent oxidative, stress-induced changes in patients with diabetes.

  3. It is high in potassium and therefore recommended to people that struggles with high blood pressure.

  4. It is high in water and fibre and contributes to a healthy digestive system.

  5. It contains high amounts of Vitamin A which promotes skin and hair health.





EASY SPINACH AND FETA QUICHE

6 Portions


Ingredients

Crust

  • 250 ml Self Raising Flour

  • Pinch of salt

  • 60 ml Olive Oil

  • 60 ml Very Cold Water

Filling

  • 500 gr Spinach, washed and chopped

  • 1 Brown onion, chopped

  • 2 Garlic Cloves, crushed

  • 60 gr Feta (1 Wheel)

  • 200 ml Full Cream Milk

  • 4 Eggs

  • 100 gr Mozzarella Cheese, grated


Method

  1. Pre-heat oven to 180°C and lightly grease a pie plate (1 Large pie plate or 6 mini quiche pans)

  2. Mix the flour and salt.

  3. Mix olive oil and water in a separate bowl. Add to dry ingredients and mix everything well.

  4. Pat the dough into the pie plate using your fingers, pushing the dough across the bottom of the pie plate and up the sides.

  5. Chill the crust in the fridge while you prepare the filling.

  6. Spray a pan with non-stick spray and fry the onions and garlic over medium heat for about 2 minutes. Then add the spinach and sauté for about 5 minutes. Season to taste.

  7. In a bowl mix the egg, milk feta and mozzarella.

  8. Remove spinach mixture from the heat and add to your custard (milk, eggs and cheese)

  9. Spoon filling into the chilled crust and bake for 20 - 30 minutes or until golden brown.

  10. Serve hot or cold with a side salad of your choice!

NOTE - These quiches are nice for freezing (for up to 1 month). Just thaw and heat before you eat!
