Some people really like cabbage, I for one are not one of them, but this coleslaw had me wanting more!
Coleslaw without all the bad fellows for your body, but still that cherry on top to get the real feeling of it.
Cabbage is high in beta-carotene, vitamin C and fiber. (Vitamin C to reduce toxins which are the main causes of arthritis, gout, and skin diseases.) Also, cabbage may reduce the risk of some forms of cancer including colorectal cancers. It’s cheap and widely available year-round. It is possible to enjoy eating cabbage pretty much all year round. Cabbage lasts longer in the fridge than most vegetables.
If cabbage is properly stored, it can last from 3 weeks to up to 2 months in your refrigerator. Cabbage is even great for weight loss and beautiful skin! I’m sure you’ve heard of the cabbage diet (not that I would recommend it). There are only 33 calories in a cup of cooked cabbage, and it is low in fat and high in fiber. Cabbage also helps keep skin looking health, toned, blemish-free and glowing; it’s rich in antioxidants (including vitamin C and beta-carotene).
This coleslaw is a good choice for a nice healthy salad idea for this spring, you can even heat up this salad slightly for a warmer salad!
Ingredients: (for 1 serving/cup)
* 1 tsp Carbsmart mayo or vegan mayo
*1 cup cabbage
*1/2 carrot
*1/2 raw onion choves/ baby leeks
*1 tsp coconut oil
*salt & pepper
*cottage cheese - red pepper flavour or plain smooth
Instructions:
1. Grate the cabbage, carrots and onion/leeks.
2. Steam all the raw grated veggies together with coconut oil in a frying pan. Don't fry, only lightly steam and when the veg are shiny turn off the heat.
3. Let it cool down and add the tsp mayo.
4. Put the mixture into a bowl and add the cottage cheese, a pinch of salt and pepper.
5. Fold the cottage cheese in an 8 shape, don't mix it.
6. When the coleslaw has set put it in the fridge to cool a bit.
7. If you like your food pretty you can put it in a cup and turn it upside down to mold it, like you see in the pictures above. AND top it off with some balsamic reduction! Treat yourself!
With this recipe you'll hopefully be getting in a lot of more cabbage especially with its added protein, yeay!
