Blueberry Yogurt Cake


Not plain yogurt, not plain cake, but in between! Here is a low-cal recipe that will satisfy that sweet, but not too sweet craving! Perfect for dessert after dinner or even served as a nutritious breakfast!

Ingredients:


MAKES 4 SERVINGS

120g Greek yogurt/ fat-free plain yogurt
1 large egg white
30 ml Almond milk (or your choice of milk)
60g plain cake wheat flour/oat flour (blended oats)
80g blueberries
Sweetener to taste
5 ml vanilla extract

*Optional 1/2 scoop of vanilla protein powder (not calculated in below calories)

Instructions:


1. Pre-heat the oven to 180 Degrees Celsius.
2. Mix all the liquid ingredients.
3. Add the dry ingredients to the dry ingredients.
4. Fold in the blueberries.
5. Transfer the mixture to a prepared baking tray and bake for +- 30mins.
6. Let it cool and enjoy!
